As the months are getting warmer it’s time to take our cooking outside and fire up the grill.
Try this spin off of a grilled chicken that cooks on the grill but in a pan. The chicken is super juicy and the veggies cooked to perfection.
Chicken Thighs with Lemon & Olives
Ingredients
2 tbsp olive oil
2 cans artichoke hearts drained
4 boneless, skinless chicken thighs
2 med. lemons cut in quarters (squeeze juice over the chicken and then throw them in the pan)
3 cloves of fresh garlic crushed
1 can pitted green olives drained
2 tsp. paprika
2 shallots or one yellow onion sliced
salt & pepper to taste
optional fresh herbs like a sprig of sage or rosemary
Preheat grill to 450 degrees and coat bottom of a medium aluminum pan with olive oil
Add chicken thighs and then layer everything else on top. Watch video and be creative.
Cover with aluminum foil and put on the grill for 25 min. Check chicken to be sure it’s cooked
